If you really love vanilla, increase the vanilla intensity of these cookies by adding a teaspoon of vanilla extract. Vary the flavor with 1/4 teaspoon almond extract, a little bit of spice, or some lemon zest.
These are sturdy cookies, strong enough for little hands to decorate. If you like a crisper, more tender cookie, increase the butter from 3/4 cup to 1 cup.
